It is curious to think that more than one typical dessert from Ragusa, takes its name from Savoia’s dynasty.
We have Torta Savoia (a chocolate cake that you must not miss if you come to Ragusa), but there is also a biscuit called Biscotto Savoia or Dolce Savoia which is less widespread.
Biscuit Savoia is not easy to find, you can rarely find it but only in Ragusa and only during Christmas. Then, what is the best way to taste it? Ask grandmothers to prepare it, or try to prepare it yourself: here is the recipe!
Ingredients: 100 gr lard 450 gr double zero flour 400 gr sugar 60 gr unsweetened cocoa 4 eggs 100 gr chopped almonds with peel Cinnamon (to taste) One pocket of baking powder Filling: Almond paste 180 gr Minced white almonds 150 gr sugar Lemon zest Cinnamon (to taste) Icing: Sugar Water A few drops of juiced lemon.
Procedure: After kneading the lard with double zero flour (maiorca), add sugar, cocoa and eggs. Knead the mixture and make some dough sausages (milìda). Prepare the filling by mixing everything in a saucepan with a drop of water. Then, crush each sausage of dough, fill them with almond paste and re-close them, leaving the filling inside. Bake at 180° for about 20-25 minutes. While they are still warm, brush them with the icing.
If the glaze is reared, place them in a lozenge.
