According to tradition, ravioli alla ragusana are seasoned with tomato pork sauce. 
Its dough, made with only fresh pasta, holds a sweet heart which represnt the actual peculiarity of this Ragusan recipe.

As a matter of facts, inside Ragusan ravioli there is a filling of ricotta which is most of the time mix with some sugar, so that it will makes it “aruci” (sicilian way to say sweet). The sweetness of ravioli contrasts uniquely the intense flavor of tomato pork sauce. But, there is also an alternative, which is more diffused in Ragusa Ibla. This alternative does not add any sugar to the ravioli. In this case, ravioli are seasoned with ricotta fillin, marjotam and a rain of grated Ragusan Caciocavallo on the tomato pork sauce.
